Egusi Soup and meat

Egusi is a traditional one-pot soup that combines blended melon seed, pepper, leafy vegetables, and meat. It is nutty, spicy, and tasty. It is a West African staple soup rich in fat, protein, and essential nutrients. It is particularly common in Nigeria because of its delicious match with pounded yam.

Steps

  1. Blend the peppers and onions together.
  2. Blend the Egusi melon.
  3. Heat the palm oil to lighten it but don't overheat.
  4. Add onions and locust bean.
  5. Add the blended pepper and fry for 15-20 minutes.
  6. Add the Egusi melon and wait till it curdles.
  7. Stir briefly, and cook on medium-low heat for 15-40 minutes.
  8. Season to taste and add fish or meat, then cook for another 15-20 minutes
  9. Add spinach and leave to simmer for 5 minutes
  10. Serve hot with pounded yam or any other main dish.
